All Day Applesauce with Frozen Yogurt
2 pounds Granny Smith apples, cored and cut into 1/2-inch thick slices 1/4 cup sugar (optional) 1/2 teaspoon ground cinnamon 2 tablespoons fresh lemon juice Grated nutmeg 6 1/4-cup scoops fat-free, no-sugar-added vanilla frozen yogurt Lay apple slices in a 3-quart or larger crock pot. Combine sugar and cinnamon. Sprinkle over apples and drizzle with lemon juice. Cover and cook on low for 6 1/2 to 8 hours. To serve, spoon hot apples into 6 dessert dishes. Pineapple Salsa Chicken
Chet, everyone who tries this recipe just loves it. 3-6 skinless chicken breasts 1 can tidbit pineapple (drain the juice) 1 can black beans (do not drain) 1 32-ounce jar of mild to medium chunky style salsa Place the thawed chicken breasts in the crockpot and add the rest of the ingredients. Cook on low for 6-8 hours. Serve with warm tortillas and some rice. We like the leftovers served in a tortilla with fixins, this makes a great chicken burrito. -------------------- God gets the Glory, He gave the Gift

Grape Jelly Meatballs
1 1/2 cups chili sauce 1 cup grape jelly (can use currant jelly) 1 to 3 tsp Dijon mustard 1 pound lean ground beef 1 egg, lightly beaten 3 Tbs fine dry bread crumbs 1/2 tsp salt Combine chili sauce, jelly, and mustard in crock pot and stir well. Cook, covered, on high while preparing meatballs. Combine remaining ingredients and mix thoroughly. Shape into 30 meatballs. Bake meatballs in a preheated 400 degree oven for 15 to 20 minutes; drain well. Add meatballs to sauce, stir to coat, cover and cook on low for 6 to 10 hours. Psst... Chicken with Grapes
4 to 6 boned skinned chicken breast halves 1 Tbs butter 2 Tbs lemon juice 1 Tbs dry sherry or white wine 8-12 ounces fresh mushrooms, sliced Salt to taste Freshly-ground black pepper to taste 1 Tbs cornstarch mixed with 2 Tbs water 1 cup green seedless grapes Place chicken, butter, lemon juice, sherry, mushrooms, and salt and pepper in the crockpot Cover and cook on LOW for 6 to 8 hours. Stir in the cornstarch mixture and grapes during the last 45 minutes. (May be cooked on HIGH 3 1/2 to 4 1/2 hours, adding grapes the last 20 minutes.) Serve over rice.
